Toast the hazelnuts and prepare the tray

Heat the oven to 180°C (350°F). Line a large rimmed baking sheet with parchment. Spread 130 g of whole hazelnuts in an even layer and toast for 8 to 10 minutes, until fragrant and the skins look dry and slightly darkened. Start checking at 8 minutes. Tip them into a clean kitchen towel, let them cool briefly until warm but safe to handle, rub away the loose skins, and chop them into rough pieces. Keep the oven on.

Whisk 240 g of all-purpose flour, 30 g of unsweetened cocoa powder, 5 g of baking powder, and 3 g of fine sea salt in a medium bowl until the cocoa is evenly dispersed and no compact pockets remain. Break up any stubborn lumps with the whisk so the finished crumb bakes evenly.
Mix the chocolate hazelnut dough
In a large bowl, whisk 3 large eggs with 150 g of granulated sugar for about 1 minute, until slightly thickened and paler. Finely grate the zest from 1 orange, for zest directly into the bowl, then whisk in 5 ml of vanilla extract. Add the cocoa flour mixture and fold just until no dry streaks remain. Chop 90 g of dark chocolate into pea-size pieces, then fold it in with the toasted hazelnuts. The dough will be dense and sticky. Do not taste raw dough.

Scrape the dough onto the lined baking sheet. Dampen your hands lightly and shape logs about 6 cm wide and 2 cm high. For 2 servings, make one log about 12.5 cm long; for 4 servings, make one log about 25 cm long; for 6 servings, make one 25 cm log and one 12.5 cm log; for the default 8 servings, make two parallel logs about 25 cm long. Smooth the tops and keep the thickness even from end to end so the centers bake at the same rate. Use extra trays as needed rather than crowding the dough. After shaping, wash your hands with soap and water and thoroughly clean any utensils and work surfaces that touched the raw dough before handling the baked logs or ready-to-eat biscotti.
Bake the logs until fully set

Bake at 180°C (350°F) for 24 to 28 minutes. Start checking at 24 minutes. The logs should look matte, feel firm at the edges, and show a few fine surface cracks. Check the thickest center with a food thermometer; it must reach at least 71°C/160°F, with no wet dough visible around the probe. Remove the tray from the oven and reduce the oven temperature to 150°C (300°F).
24:00Rest and slice the baked logs

Let the baked logs stand on the tray for 15 minutes, until firm enough to move but still slightly warm. Transfer them to a clean cutting board. With a sharp serrated knife and a gentle sawing motion, cut diagonally into slices about 1.5 cm (1/2 in) thick, aiming for about 3 biscotti per serving (6, 12, 18, or 24 biscotti for 2, 4, 6, or 8 servings). Arrange the slices cut-side down on the lined tray with a little space between them.
15:00Dry the first cut side
Bake the slices at 150°C (300°F) for 10 minutes. The cut faces should lose their sheen and feel dry at the edges, while the centers remain slightly tender because they will continue to crisp during the final bake and cooling.
10:00Turn and finish the second bake

Turn every biscotto onto the opposite cut side. Bake for 8 to 12 minutes more, checking first at 8 minutes, until both sides feel dry, the edges are crisp, and the chocolate pieces remain intact rather than scorched. Transfer the biscotti to a wire rack and cool for at least 10 minutes, until the crumb has a clean snap. Serve with espresso or coffee (optional).

Smart Substitutions
- No hazelnuts? Use the same weight of whole almonds or pistachios and toast them until fragrant before chopping.
- No orange? Use finely grated lemon zest for a sharper citrus note, or omit the zest for a more direct cocoa flavor.
- No dark chocolate? Use semisweet chocolate for a sweeter biscotto with softer chocolate pockets.
- Dutch-process or natural cocoa? Either works here. Dutch-process cocoa tastes rounder and darker; natural cocoa gives a slightly brighter chocolate edge.
Tips and Variations
- Weigh the flour and cocoa when possible; an overpacked cup makes the logs dry and prone to cracking.
- Use a sharp serrated knife and a light sawing motion so the roasted hazelnuts cut cleanly instead of tearing the log.
- Leave a little space between slices during the second bake so dry oven air can reach both cut surfaces.
What Went Wrong?
- Dough is too sticky to shape Let it stand for 5 minutes so the flour hydrates, then use lightly damp hands rather than adding extra flour.
- Logs spread too wide Shape them narrower and taller before baking, and confirm the flour was weighed or spooned lightly into the cup.
- Slices crumble while cutting Let the logs stand 5 minutes longer, then cut with a sharper serrated knife using gentle back-and-forth strokes.
- Biscotti are still soft after cooling Return them to a 150°C (300°F) oven for 3 to 5 minutes per side, then cool again on the rack.
