Prepare the dish and soak the bread

Heat the oven to 180°C (350°F). Coat a baking dish large enough to hold the filling in an even layer about 4 cm (1 1/2 in) deep with 5 ml of olive oil for baking dish. Tear 60 g of white sandwich bread into a bowl, pour over 120 ml of whole milk for filling, and press the pieces into the milk. Let them soften while you start the filling.
Soften the aromatics and bloom the spices

Warm 10 ml of olive oil for filling in a large skillet over medium heat. Peel and finely chop 1 yellow onion. Mince 2 garlic cloves. Mash the softened bread into its milk with a fork. Add the bread mixture to the skillet with 30 g of apricot jam, 22 ml of apple cider vinegar, and 50 g of seedless raisins. Cook over medium-low heat for about 3 minutes, stirring, until the filling is cohesive and moist but no liquid runs across the pan when you draw the spoon through it. Spoon the filling into the prepared dish, spread it evenly, and press the surface lightly so the topping will sit flat.

Whisk 2 large eggs with 180 ml of whole milk for topping until no streaks of egg white remain. Pour the mixture slowly over the filling so it reaches the edges without disturbing the surface. Arrange 2 bay leaves on top and scatter 15 g of flaked almonds evenly over the custard.
Bake, rest, and serve
Bake for 30 to 35 minutes, beginning the first doneness check at 30 minutes. The topping should be lightly golden, set around the edges, and only faintly wobbly in the center. Insert a food thermometer into the center; the casserole must reach 74°C/165°F. Rest for 10 minutes, remove the bay leaves, and serve with yellow rice (optional) and fruit chutney (optional).

- Prefer lamb? Use lean ground lamb in the same quantity and follow the same thermometer guidance.
