Prepare and season the radishes

Heat the oven to 220°C (425°F). For 4 servings, use a 13 by 18-inch (33 by 46 cm) rimmed half-sheet pan; for 6 or 8 servings, divide the radishes between two pans so they remain uncrowded. Rinse 680 g of radishes, scrub away any soil, and pat them thoroughly dry. Trim the root and stem ends, then halve small radishes and quarter larger ones so the pieces are close in size. Toss them on the pan with 30 ml of extra-virgin olive oil, 3 g of kosher salt for radishes, 0.6 g of black pepper, and 1 g of ground cumin. Turn the pieces cut side down and spread them into one uncrowded layer.
Roast until browned and tender

Roast without stirring for 20 to 25 minutes. Begin checking at 20 minutes: the cut faces should be deep golden in patches, the skins should look lightly wrinkled, and a small knife should slide into the thickest piece with little resistance. Give the pan a few more minutes if the centers are still firm.

While the radishes roast, spoon 240 g of plain whole-milk Greek yogurt into a bowl. Finely zest 1 small lemon over the yogurt, then halve it and squeeze in the juice a little at a time, stopping when the yogurt tastes bright but remains thick. Mince 1 garlic clove. Chop 6 g of fresh dill and 8 g of fresh flat-leaf parsley, then stir them into the yogurt with 1 garlic clove and 1 g of kosher salt for yogurt. Taste and adjust the lemon balance before serving.
Rest briefly and assemble

Let the roasted radishes stand on the pan for 5 minutes so they remain warm but no longer give off intense heat. Spread the herbed yogurt across a shallow serving platter, leaving natural ridges from the back of a spoon. Spoon the radishes and any seasoned pan juices over the yogurt, keeping some browned cut faces visible, and serve immediately.

Smart Substitutions
- No dill? Use fresh mint or chives for a different cool, green note.
- No flat-leaf parsley? Cilantro gives the yogurt a brighter, more citrusy direction.
- No Greek yogurt? Use labneh, or choose a thick plain unsweetened dairy-free yogurt.

What Went Wrong?
- Radishes are pale Give them more space on the pan and keep the cut sides in direct contact with the hot metal.
- Radishes browned before becoming tender Lower the oven to 200°C (400°F) and continue roasting until a knife enters the centers easily.
- Yogurt tastes too sharp Balance it with a small pinch of the measured yogurt salt rather than adding more lemon.
- Yogurt becomes runny on the platter Let the radishes complete the full 5-minute rest before placing them on the yogurt.
