Toast and chop the hazelnuts
Heat the oven to 180°C (350°F). Spread 60 g of raw hazelnuts in a single layer on a rimmed baking sheet. Toast for 8 to 10 minutes, shaking the pan once, until fragrant and lightly browned beneath the skins; begin checking at 8 minutes. Tip the nuts onto a clean towel. When they are cool enough to handle, rub away the loose skins and chop them into rough pieces.

While the barley simmers, roast the grapes and make the dressing. Drain the barley thoroughly, shake off excess water, and transfer it to a large mixing bowl.

Increase the oven temperature to 220°C (425°F). Line a large 33-by-46-cm (13-by-18-inch) rimmed baking sheet with parchment paper for the default 4-serving batch; for 6 or 8 servings, use two sheets so the grapes remain uncrowded. Add 450 g of red seedless grapes, 15 ml of extra-virgin olive oil for roasting, 2 g of fresh thyme leaves, 1.25 g of kosher salt for grapes, and 1 g of black pepper, then toss until evenly coated and spread the grapes in one uncrowded layer. Roast for 18 to 22 minutes, beginning the check at 18 minutes, until many skins are blistered, a few grapes have split, and the juices on the pan look lightly syrupy rather than watery.

Mince 1 shallot. Add the shallot to a small bowl with 30 ml of lemon juice, 10 g of Dijon mustard, 20 g of pure maple syrup, and 1.25 g of kosher salt for dressing. Whisk until smooth, then slowly whisk in 30 ml of extra-virgin olive oil for dressing until the dressing looks lightly thickened and cohesive.
Dress the barley and finish the salad

Pour the dressing over the warm barley and toss thoroughly so the grains absorb it. Add the roasted grapes and every drop of their pan juices, then fold in 60 g of baby arugula. Chop 20 g of fresh parsley and fold it in with the toasted hazelnuts. Toss gently until the arugula just begins to soften, taste for balance, and serve the salad warm.
Smart Substitutions
- No hazelnuts? Use toasted walnuts or almonds for a similarly crisp, nutty finish.
- No arugula? Use baby spinach for a milder salad or thinly sliced radicchio for more bitterness.
- No maple syrup? Use the same amount of honey; the salad will remain vegetarian but will no longer be vegan.
- No pearled barley? Use pearled farro and cook it until tender, following the package timing before draining.
