Blend everything with 6 g of ground turmeric, 4 g of ground coriander, 2 g of ground cumin, and 5 g of fermented shrimp paste, adding only enough water to help the blades form a thick, mostly smooth paste.

Heat 30 ml of neutral cooking oil in a large heavy saucepan over medium heat. Add the blended paste and cook for 6 to 8 minutes, stirring and scraping the base often, until the raw onion smell softens, the color deepens, and small beads of oil appear around the edges. Reduce the heat if the paste begins to catch before it becomes fragrant.

Bring the broth just to a simmer over medium heat, stirring to dissolve the sugar. Add 80 g of fried tofu puffs and simmer gently for 8 minutes so they absorb the broth. Keep the bubbles calm rather than boiling hard, which can make the coconut broth look oily and separated.

Add 150 g of bean sprouts to the gently simmering broth and cook for 1 minute. Add 450 g of raw peeled prawns and cook for 3 to 5 minutes, turning them through the broth once, until the flesh is pearly, firm, and opaque. Begin checking at 3 minutes and use a food thermometer on a thick prawn to confirm 63°C (145°F). Do not place cooked prawns on the plate that held the raw seafood.

Chop 15 g of fresh coriander leaves and 10 g of fresh mint leaves. Stir roughly half of each into the broth with 45 ml of lime juice, then taste and adjust the balance with a little more fish sauce or lime only if needed. Divide the noodles among deep bowls and ladle over the hot broth, tofu puffs, sprouts, and prawns. Scatter over the remaining herbs and fresh red chilli (optional). Serve immediately while the noodles are springy and the broth is steaming.
Smart Substitutions
- No tofu puffs? Use firm tofu cut into bite-size pieces; pan-sear it first for a sturdier texture.
- No palm sugar? Use light brown sugar in the same amount.
- No fresh lemongrass? Use lemongrass paste, starting with 1 tablespoon and adjusting to taste.
- No fermented shrimp paste? Use 2 teaspoons of white miso and add fish sauce cautiously; the broth will be less traditional but still savory.
Tips and Variations
- Do not over-soak the noodles; they soften further when the hot broth is ladled over them.

What Went Wrong?
- Broth looks split Lower the heat and stir gently. The flavor is still good; avoid a hard boil once the coconut milk is added.
- Broth tastes dull Add lime first, then a small splash of fish sauce. Acidity often restores the aromatics before more salt is needed.
- Noodles are too soft Soak the next batch for less time and drain while the centers still feel slightly firm.
- Prawns are rubbery Add them only at the end and begin checking at 3 minutes; remove them as soon as they are opaque and reach 63°C (145°F).
