Continue cooking until the cangrejo reaches 63°C (145°F) and the flesh is pearly white, firm, and opaque.

Roll each piece between your palms into a short tapered dumpling about the length of two finger joints, keeping the shaped pieces under a clean towel so their surfaces do not dry out. Uncover and simmer for another 3 to 5 minutes, until the salsa coats a spoon and a dumpling cut through the center has no dry or harinosa core. Start the timer for the covered 10-minute simmer.

Remove the pot from the heat and scatter the clean reserved culantro over the curry. Let the salsa stand for 3 minutos so it settles around the dumplings. Spoon cangrejo, dumplings, and plenty of curry into wide tazóns or onto deep plates, and serve immediately with a separate tazón for shells.
