Make the smooth masa mixture

Put 60 g of masa harina for tortillas in a medium bowl. Gradually whisk in 240 ml of cool water for masa mixture, starting with a small splash to form a smooth paste before adding the rest. Continue whisking until no dry pockets or visible lumps remain; the mixture should look pale, fluid, and evenly suspended.
Infuse the cinnamon and dissolve the piloncillo
Combine 480 ml of water for cinnamon infusion, 2 Mexican cinnamon sticks, and 50 g of piloncillo, finely chopped in a heavy saucepan. Set the pan over medium heat and stir as the piloncillo softens. Once the liquid reaches a gentle simmer, cook for 5 to 7 minutes, stirring occasionally, until the sweetener has dissolved and the water smells distinctly of cinnamon. Start checking at 5 minutes.

Lower the heat to medium-low. Add 480 ml of whole milk, 92 g of Mexican table chocolate, and 1.5 g of fine salt. Whisk steadily for 4 to 6 minutes, starting the first check at 4 minutes, until the chocolate has melted and the liquid is steaming with small bubbles around the edge. Keep it below a vigorous boil so the milk stays smooth.

Whisk the masa mixture once more, then pour it slowly into the saucepan while whisking the chocolate mixture. Reduce the heat to low and maintain a very gentle simmer for 8 to 10 minutes, whisking frequently and scraping the corners of the pan. Begin checking at 8 minutes. The champurrado is ready when it lightly coats a spoon and falls from the whisk in a smooth ribbon while remaining easy to pour. Remove the cinnamon sticks.

Remove the pan from the heat and stir in 5 ml of alcohol-free vanilla flavoring. Whisk vigorously for a light foam, or roll a molinillo between your palms with its head submerged so the hot drink does not splash. Pour immediately into warm mugs and, if using, finish with ground cinnamon (optional).
Smart Substitutions
- No piloncillo? Use packed dark brown sugar for a similar deep sweetness, though the flavor will be less earthy.
- No Mexican table chocolate? Use 85 to 92 g semisweet or dark chocolate. After it melts, taste and add up to 2 tablespoons additional finely chopped piloncillo if the drink needs more sweetness.
- Prefer no dairy? Use an unsweetened, full-bodied oat or soy beverage in place of whole milk.
- No cinnamon sticks? Use 1/2 teaspoon ground cinnamon, whisking it into the milk so it disperses evenly; add a little more only after tasting.
Tips and Variations
- Choose fine masa harina labeled for tortillas; coarse tamal masa can make the drink feel gritty.
- Build the masa mixture gradually so the first splash of water becomes a smooth paste before the rest is added.
- Keep the final simmer quiet and whisk along the bottom of the pan, where the thickened masa is most likely to catch.
What Went Wrong?
- Champurrado is lumpy Take the pan off the heat and blend briefly with a fully submerged immersion blender, then return it to low heat.
- Drink is too thick Whisk in hot water or milk a little at a time until it flows easily from the whisk.
- Drink is too thin Continue the gentle simmer for 2 to 3 minutes, whisking often, so the masa can hydrate and thicken.
- Chocolate looks grainy Lower the heat and whisk steadily; strong boiling can make the milk and chocolate lose their smooth texture.
