Cook for 25 to 30 minutes without frequent stirring, beginning the first check at 25 minutes, until the grains are tender and the liquid has been absorbed.

While the rice cooks, preheat an outdoor grill or well-ventilated grill pan over medium-high heat to about 205°C (400°F). Use clean tongs to lift 700 g of boneless skinless chicken thighs from the marinade, letting excess drip off, and discard the remaining marinade. Grill for 5 to 7 minutes on the first side; set the timer for the first 5-minute check. Turn and grill for another 5 to 7 minutes, moving pieces to a cooler area if the spices darken too quickly. Use a food thermometer to confirm the thickest part of every piece reaches at least 74°C/165°F. Transfer the chicken with clean tongs to a clean plate and let it rest for 5 minutes.

What Went Wrong?
- Rice is still wet Remove the lid and cook over the lowest heat for 5 to 8 minutes, then cover and let it stand for 10 minutes before fluffing.
- Rice is firm but the pot looks dry Sprinkle in a small splash of hot water, cover tightly, and cook on low for another 5 minutes before checking again.
- Bottom of the rice is scorching Move the pot off the heat at once. Spoon the upper rice into a clean serving dish without scraping the dark layer from the bottom.
- Chicken browns before it is cooked through Move the pieces to a cooler section of the grill or lower the heat, then continue cooking until a food thermometer reads at least 74°C/165°F.
