Mix and hydrate the coconut

Heat the oven to 175°C (350°F) and line a rimmed baking sheet with parchment paper. Stir 200 g of unsweetened desiccated coconut, 230 g of sweetened condensed milk, 5 ml of vanilla extract, 1 g of ground cinnamon, and 0.75 g of fine salt together in a medium bowl, pressing through any dry pockets until every strand looks evenly coated. Let the mixture stand for 5 minutes so the coconut softens and the binder thickens.

Scoop heaped tablespoons of the mixture onto the prepared sheet, making about two mounds per serving. Use the back of the spoon to press each portion into a compact, squat dome with a level base; leave roughly 2.5 cm (1 in) between them. Tuck in loose strands so they toast instead of scorching.
Bake until golden at the edges

Bake for 16 to 20 minutes, checking at 16 minutes. The coconut tips and bases should be golden, the sides should look set, and the centers should remain pale and slightly soft. If one side of the sheet colors faster, turn the sheet once and continue only until the lighter cocadas match.

Set the baking sheet on a heatproof surface and let the cocadas stand for 20 minutes. They will firm as they lose their oven heat. Lift them with a thin spatula and serve when the bases hold together and the centers are still gently chewy.

Smart Substitutions
- No dairy condensed milk? Use the same weight of sweetened condensed coconut milk; the flavor will be more coconut-forward and the mounds may spread slightly.
- No ground cinnamon? Use a small pinch of freshly grated nutmeg, no more than 1/8 teaspoon for the full batch, or leave the spice out for a cleaner coconut flavor.
- Long coconut shreds? Pulse them briefly in a food processor until finely shredded so the mixture packs into neat mounds without changing the quantity.
- Want a citrus note? Replace the vanilla with 1/2 teaspoon finely grated lime zest, then add up to another 1/2 teaspoon after tasting the mixture.
Tips and Variations
- Use a metal spoon or small scoop to compress each portion; loosely packed mounds are more likely to crumble.
- Keep the cocadas similar in size so their bases brown at the same rate.
- For a more pronounced toasted flavor, place the baking sheet on the lower-middle oven rack while keeping a close eye on the bases.
What Went Wrong?
- Mixture will not hold a mound Let it stand for another few minutes, then press each scoop firmly against the side of the bowl before shaping.
- Cocadas spread too much The mixture is too loose. Fold in 1 tablespoon of extra unsweetened desiccated coconut at a time, up to 1/4 cup, until a firmly pressed spoonful keeps its shape.
- Bases brown before the tops Move the sheet one rack higher and finish baking only until the exposed tips turn golden.
- Cocadas crumble when lifted Leave them on the hot sheet for the full standing time so the condensed-milk binder can set around the coconut.
