Begin checking at 6 minutes; the sauce is ready when it looks glossy and clings to the chicken without pooling. Taste and adjust the seasoning only after the sauce has reduced.

Layer and serve the tostadas

Arrange 8 corn tostada shells on a work surface. Spread the warm black beans over each shell, then spoon chicken tinga on top, letting excess sauce drain back into the skillet. Finish with 80 g of romaine lettuce, 120 g of ripe avocado, 40 g of Cotija cheese, 40 ml of Mexican crema, and 10 g of fresh cilantro. Serve immediately with lime wedges (optional).
Smart Substitutions
- Prefer chicken breast? Use the same weight of boneless skinless chicken breast and begin checking the internal temperature after 14 minutes so it does not overcook.

What Went Wrong?

- Chicken will not shred easily Return it to the sauce and simmer gently for a few more minutes, then check again; thigh meat should separate with light pressure from two forks.
