Make the jerk paste and prepare the chicken

Coat every surface with the paste and arrange the pieces on the rack without crowding. Wash hands, then clean the blender, utensils, counter, and any surface touched by raw chicken with hot soapy water.
Roast until browned and safely cooked
Roast 680 g of boneless skinless chicken thighs for 20 minutes, turn each piece with clean tongs, then continue roasting for 10 to 15 minutes. Begin checking at 30 minutes. The surface should be darkly browned with a few charred edges, and a food thermometer inserted into the thickest part must register at least 74°C/165°F. Move cooked chicken to a clean plate; never return it to the plate or utensils that held raw chicken.

Start this step as soon as the chicken goes into the oven. Rinse 240 g of long-grain white rice in a fine-mesh sieve under cool running water until the water is mostly clear, then drain well. Drain and rinse 240 g of canned red kidney beans. The rice should be tender and separate rather than wet; if a little moisture remains, cover for 2 more minutes before fluffing again.

Smart Substitutions
- No Scotch bonnet? Use habanero for comparable fruitiness and heat, starting with less if you prefer a milder paste.
- Using bone-in thighs? Keep the oven temperature the same and allow extra roasting time, checking the thickest part with a food thermometer for 74°C/165°F.
- No kidney beans? Use cooked pigeon peas or black beans in the same amount; the color and texture will change, but the coconut rice method remains the same.
- No full-fat coconut milk? Use light unsweetened coconut milk in the same amount for a less rich, slightly looser rice.
Tips and Variations
- Blend the jerk paste only until slightly textured; a little body helps it cling and brown on the chicken.
- Keep the Scotch bonnet for the rice whole and unpierced so it perfumes the pot without flooding every grain with heat.
- Use a heavy saucepan with a tight lid; steady trapped steam is what cooks the rice evenly.
What Went Wrong?
- Chicken is cooked but not browned Move it closer to the top heat for 1 to 2 minutes, watching continuously so the sugar and spices char without burning.
- Jerk coating tastes bitter The spices or sugar scorched. Reduce the oven heat slightly for the remaining pieces and move the rack farther from the top element.
- Rice is still firm Sprinkle in a small splash of hot water, cover tightly, and cook over the lowest heat for 3 to 5 minutes before resting again.
- Rice is wet or sticky Leave it covered off the heat for several more minutes, then fluff from the bottom with a fork rather than stirring.
