Prepare the eggplant and cheese

Heat the oven to 200°C (400°F). Trim 1200 g of eggplants, then cut them lengthwise into slices about 6 mm (1/4 in) thick. Arrange the slices on clean towels and season evenly with about half of 6 g of fine sea salt. Tear 300 g of fresh mozzarella into small pieces, spread them on another clean towel, and blot firmly so the cheese will melt without releasing excess liquid. Grate 100 g of Parmigiano-Reggiano and set it aside.
Cook a concentrated tomato sauce
Chop 150 g of yellow onion and mince 6 g of garlic cloves. Warm 30 ml of extra-virgin olive oil in a wide saucepan over medium heat. Add 150 g of yellow onion and cook for 6 to 8 minutes, stirring often, until soft and lightly golden. Add 6 g of garlic cloves and cook for 30 seconds. Stir in 800 g of crushed tomatoes, 1 g of black pepper, and what remains of 6 g of fine sea salt. Simmer uncovered for 20 to 25 minutes, stirring occasionally, until the sauce is thick enough that a spoon drawn across the pan leaves a trail for a moment. Start checking at 20 minutes.

Pat the eggplant slices dry. Pour 120 ml of light olive oil into a wide heavy skillet, adding it in batches as needed, and heat over medium-high until the surface shimmers. Fry the eggplant in a single layer without crowding, about 2 minutes per side, until golden, pliable, and tender when pierced. Adjust the heat so the slices brown steadily without smoking. Transfer each batch to a rack set over a tray or to clean paper towels and let excess oil drain.

Use a baking dish large enough to hold four even layers. Spread a light coating of tomato sauce over the base, then arrange eggplant slices in a slightly overlapping layer. Add some of 300 g of fresh mozzarella, 100 g of Parmigiano-Reggiano, and torn leaves from 20 g of fresh basil. Repeat with the remaining eggplant and sauce, reserving enough cheese for the top. Finish with tomato sauce, 300 g of fresh mozzarella, and 100 g of Parmigiano-Reggiano. Press the layers gently so they sit evenly without compacting them.
Bake until bubbling and bronzed
Bake at 200°C (400°F) for 28 to 35 minutes, until the sauce bubbles around the edges and the cheese on top is melted with deep golden spots. Start checking at 28 minutes. If the top colors before the center is visibly bubbling, cover it loosely with foil for the remaining time.

Let the parmigiana stand uncovered for 20 minutes. This pause allows the tomato, cheese, and eggplant layers to settle so portions hold their shape while remaining tender. Finish with the remaining fresh basil leaves and serve warm.
