Make the aromatic bumbu
Set a large heavy pot over medium heat. Toast 4 g of coriander seeds and 2 g of cumin seeds for 1 to 2 minutes, shaking the pot and starting to check at 1 minute, until fragrant but not dark. Transfer the seeds to a spice grinder and grind with 1 g of ground white pepper. Roughly chop 160 g of shallots, 6 garlic cloves, and 30 g of fresh ginger, then blend them with the ground spices and 6 g of ground turmeric to a thick, slightly coarse paste; add a small splash of water only if the blades need help moving.

Pour in 1500 ml of unsalted chicken stock, scraping the bottom of the pot to loosen the seasoned paste. Stir in 7 g of kosher salt and 4 g of granulated sugar, then bring the broth just to a boil. Lower 700 g of boneless skinless chicken thighs into the pot, reduce the heat to maintain a gentle simmer, and partially cover. Cook for 20 to 25 minutes, starting to check at 20 minutes, until a food thermometer inserted into the thickest piece reads at least 74°C/165°F. Wash hands and any plate or utensil that touched raw chicken, and use a clean plate for the cooked chicken.

While the chicken simmers, bring a saucepan of water to a steady boil. Lower in 4 large eggs and cook for 10 minutes so the whites and yolks are fully firm, then transfer them to cool water. Put 160 g of rice vermicelli in a heatproof bowl, cover with freshly boiled water, and soak according to the package directions until flexible and tender, usually 4 to 8 minutes. Drain well and loosen the strands with clean tongs.

Lift the cooked chicken onto a clean cutting board and keep the broth at a lively simmer. Cut 200 g of green cabbage into fine shreds and add it with 200 g of mung bean sprouts. Cook for 3 to 4 minutes, starting to check at 3 minutes, until the cabbage is tender-crisp and the sprouts are thoroughly hot and cooked through. Discard the lemongrass and lime leaves. Shred the chicken with two clean forks, return it to the broth, and simmer for 1 minute so every piece is hot.

Thinly slice 40 g of scallions and cut 2 fresh limes into wedges. Peel the firm cooked eggs and halve them. Taste the broth and adjust the seasoning with a little more salt only if needed. Divide the drained noodles among warm bowls, add egg halves, and ladle over the chicken, vegetables, and steaming broth. Scatter with 40 g of scallions and fried shallots (optional), then serve immediately with 2 fresh limes and sambal (optional) at the table.
Smart Substitutions
- No makrut lime leaves? Use wide strips of zest from one lime and remove them with the lemongrass before serving.
- No rice vermicelli? Use thin glass noodles and follow their package soaking time.
- Prefer chicken breast? Use boneless skinless breasts, begin checking earlier, and still cook them to at least 74°C/165°F.
- No shallots? Use a mild yellow onion with the same total weight; the broth will be slightly less sweet.
Tips and Variations
- Crush the thick end of each lemongrass stalk firmly so its citrus aroma reaches the broth.
- Keep the drained noodles in the serving bowls rather than the pot so they stay springy.
- Fry the bumbu patiently; its raw shallot smell should fade before the stock goes in.
What Went Wrong?
- Broth tastes flat Add salt in small pinches, then squeeze in lime; the citrus sharpens the spices without making the broth heavy.
- Bumbu is catching on the pot Lower the heat and stir in a small splash of water, scraping immediately before the paste burns.
- Noodles turned too soft Drain them as soon as they are flexible and keep them out of the broth until the bowls are assembled.
- Chicken feels tough Keep the broth below a hard boil and remove the chicken as soon as it reaches 74°C/165°F.
