Mix and rise the batter
Melt 70 g of unsalted butter for waffles and let it cool until warm. Combine 120 ml of warm water, 360 ml of whole milk, 7 g of instant yeast, and 25 g of granulated sugar in a large bowl; the liquids should be about 38°C to 43°C (100°F to 110°F), warm but not hot. While the batter rises, peel and core 500 g of firm pears, then cut them into 1.5 cm (1/2 in) pieces. Melt 14 g of unsalted butter for compote in a medium saucepan over medium heat. Add 500 g of firm pears, 45 ml of pure maple syrup, 15 ml of lemon juice, 1.5 g of ground cinnamon, and 30 ml of water for compote. Bring to a gentle simmer, then reduce the heat to medium-low and cook uncovered for 10 to 12 minutes, stirring occasionally. Start checking at 10 minutes; the pears should be tender but still distinct, and the liquid should coat a spoon. Remove from the heat.

Heat a Belgian-style waffle iron according to its manufacturer instructions while the batter finishes rising. Set it to medium-high if the iron has adjustable heat. The grids should be fully hot before batter is added; an underheated iron encourages sticking and pale, soft waffles.
Cook the waffles until crisp
Stir the risen batter gently once to even out the texture without knocking out all the bubbles. Add enough batter to cover about two-thirds of the lower grid, close the iron, and cook for 4 to 6 minutes. Start checking at 4 minutes. The waffle is ready when it is deeply golden, releases without tearing, the escaping steam has slowed, and the center reaches at least 71°C/160°F on a food thermometer. Repeat with the remaining batter, allowing the iron to recover its heat between waffles. Keep utensils that touched raw batter away from cooked waffles.

Place one hot waffle on each plate and spoon the warm pear compote across the center, letting some fruit settle into the pockets. Serve immediately while the edges are crisp and the compote is glossy.
Smart Substitutions
- No whole milk? Use 2% milk; the waffles will be slightly less rich but will rise and crisp normally.
- No instant yeast? Use the same amount of active dry yeast and give the warm liquid mixture 8 to 10 minutes to become foamy before mixing the batter.
- No maple syrup? Use light brown sugar and add an extra spoonful of water to help the pears form a light sauce.
- No firm pears? Use firm sweet apples and cook until the pieces are tender but still hold their shape.
Tips and Variations

What Went Wrong?
- Waffles are dense Check that the yeast is fresh and that the milk-water mixture was warm rather than hot. Let the batter rise until clearly foamy before cooking.
- Waffles stick to the iron Preheat the iron completely, follow its surface-care instructions, and wait until the waffle releases naturally before lifting the lid.
- Waffles are pale or soft Cook longer and let the steam slow before opening the iron. Also allow the grids to return to full heat between waffles.
- Pear compote is watery Simmer it uncovered for another minute or two, stirring often, until the juices coat the fruit and a spoon.
