Make the crust dough

Whisk 150 g of all-purpose flour, 15 g of granulated sugar, and 2 g of kosher salt for crust in a wide bowl. Cut 100 g of unsalted butter for crust into 1 cm (1/2 in) cubes, add it to the bowl, and work it into the flour with a pastry cutter or fingertips until most pieces are pea-sized and a few are slightly larger. Drizzle in 45 ml of ice water while tossing with a fork. Stop mixing as soon as a squeezed handful holds together; add no extra water unless dry flour remains at the bottom. Press the dough into a disk, cover it, and let it rest in the coolest part of the kitchen for 20 minutes.

Heat the oven to 190°C (375°F) with a rack in the lower third. Match the pie plate to the selected yield so the filling stays at a similar depth: use an approximately 11.5 cm (4 1/2 in) plate for 2 servings, 16 cm (6 1/4 in) for 4, 20 cm (7 3/4 in) for 6, or 23 cm (9 in) for 8. Roll the dough between two sheets of parchment into a circle about 7.5 cm (3 in) wider than the plate. Peel away one sheet, invert the dough into the plate, and remove the second sheet. Fit the dough without stretching, trim the overhang to about 2 cm (3/4 in), fold the edge under, and crimp. Set the shaped crust aside while preparing the pecans and filling.
Toast the filling pecans

Set aside roughly one-quarter of 170 g of pecan halves for the top; keep those halves untoasted. Spread the remaining pecans on a rimmed baking sheet. Toast for 6 to 8 minutes, stirring once, until fragrant and one shade darker. Watch closely near the end because the nuts can darken quickly, then transfer them to a plate.

Let the toasted pecans stand on the plate for 5 minutes, until they no longer release strong heat and can be broken without softening the crust dough.
05:00Brown the filling butter
Melt 57 g of unsalted butter for filling in a small light-colored saucepan over medium-low heat. Continue cooking for 2 to 4 minutes, swirling often, until the foam subsides, the milk solids turn light amber, and the butter smells nutty. Remove the pan from the heat before the solids become dark brown.

Let the browned butter stand off the heat for 5 minutes. It should remain fluid but should no longer feel fiercely hot near the pan before it is whisked into the eggs.

In a large bowl, whisk 330 g of light corn syrup, 100 g of light brown sugar, 5 ml of vanilla extract, and 1 g of kosher salt for filling until smooth. Crack 3 large eggs into a separate small bowl. When the selected yield produces a fractional egg quantity, beat enough eggs until uniform and measure the displayed fraction before adding it. Whisk the measured egg into the syrup mixture gradually, then slowly whisk in the browned butter until the filling is uniform. Discard the shells, wash hands, and clean any surface touched by raw egg before continuing.
Assemble the pie
Coarsely break the toasted pecans and spread them across the crust. Pour in the filling slowly so the nuts stay evenly distributed, then arrange the reserved untoasted pecan halves over the surface. Place the pie plate on a rimmed baking sheet to catch any drips.
Set the crust
Bake at 190°C (375°F). For the default 8-serving pie, bake for 15 minutes. For a proportionally sized smaller pie, use 8 minutes for 2 servings, 10 minutes for 4, or 12 minutes for 6. At the end of this stage, the crust edge should begin to color and the filling should look fluid but slightly puffed near the rim. If the crust browns quickly, shield only the edge with foil without covering the center.

Reduce the oven to 175°C (350°F) without removing the pie. For the default 8-serving pie, continue baking for 35 to 40 minutes and begin checking at 35 minutes. For a proportionally sized smaller pie, begin checking at 18 minutes for 2 servings, 22 minutes for 4, or 28 minutes for 6, and continue only until the same doneness cues are reached. The outer 5 cm (2 in) of an 8-serving pie, or a proportionally narrower outer band on a smaller pie, should be set and gently puffed, while the center should wobble as one piece rather than ripple like liquid. Use an instant-read food thermometer in the center, avoiding pecans and the bottom crust; the filling should reach 93°C (200°F), comfortably above the 71°C (160°F) minimum for egg dishes. Remove the pie as soon as it reaches these cues.

Set the pie on a wire rack and leave it undisturbed for 2 hours. The filling will settle from puffed to level and finish firming as it cools. Cut with a thin sharp knife, wiping the blade between slices, and serve once the center holds a clean edge.

Smart Substitutions
- Prefer a darker filling? Use dark corn syrup in the same amount for stronger molasses notes and a deeper amber color.
- No corn syrup? Use golden syrup in the same weight. The pie will taste more caramel-like and may set a little softer.
- Want less sweetness? Reduce the light brown sugar by up to one-quarter; keep the corn syrup unchanged so the filling structure remains reliable.
- No pastry cutter? Use two table knives or fingertips, working quickly so the butter stays in distinct pieces.

What Went Wrong?
- Filling is runny after cooling The center was likely below 93°C (200°F) or the pie was cut too soon. Use a thermometer and allow the full 2-hour cooling period.
- Crust is tough Too much water or mixing developed excess gluten. Add water gradually and stop as soon as the dough holds when squeezed.
- Pecans taste scorched They toasted too far before baking or the pie sat too high in the oven. Toast only to a light aroma and bake in the lower third.
- Filling looks curdled or greasy The browned butter was too hot when added. Let it cool for 5 minutes and whisk it into the egg mixture slowly.
