  2. Rinse and soak the rice

    Rinse 450 g of basmati rice in several changes of cool water, moving the grains gently with your fingers, until the water is nearly clear. Cover the rice with fresh cool water by about 5 cm (2 in) and soak for 30 minutes, then drain well.

  3. Season and brown the chicken

    Finely chop 180 g of yellow onion. Combine 9 g of fine sea salt, 1 g of black pepper, 3 g of ground turmeric, and 1 g of ground cinnamon in a small bowl; reserve half of the mixture. Measure 30 ml of olive oil and reserve half. Set out a clean plate and clean forks for the cooked chicken. Do not rinse 570 g of boneless skinless chicken thighs.   4. Braise and shred the chicken

    Pour 240 ml of water for chicken into the skillet and scrape up the browned bits. Cover and simmer gently for 18 to 22 minutes. Begin checking at 18 minutes and use a food thermometer to confirm the thickest piece has reached at least 74°C/165°F. Transfer the chicken with clean tongs to the clean plate and pull it into large bite-size pieces with the clean forks. Simmer the onion mixture uncovered for 3 to 5 minutes, until only a few spoonfuls of concentrated liquid remain, then fold that liquid through the chicken.

  5. Parboil the rice

    Bring a large pot of water to a rolling boil and add 18 g of fine sea salt, for parboiling water. Add the drained rice and boil, stirring once or twice, for 5 to 7 minutes. Begin checking at 5 minutes: a grain should be flexible and tender at the surface but still show a firm, chalky white core when bitten or broken. Drain immediately and shake the colander gently to release excess water.

  6. Make the saffron rice mixture

    Heat the oven to 190°C (375°F). Use a 23 x 33 cm (9 x 13 in) oven-safe clear glass baking dish (for 6 servings); scaled batches should use a vessel that keeps the rice at a similar depth. Melt 45 g of unsalted butter, brush about one-third over the base and sides of the dish, and reserve the rest. Whisk 245 g of plain whole-milk yogurt with 3 egg yolks, the bloomed saffron liquid, the reserved seasoning, and the reserved olive oil until smooth. Fold in the drained rice gently until every grain is evenly yellow without crushing the rice.

  7. Layer and press the tahchin

    Spread a little more than half of the saffron rice mixture across the prepared dish. Press it into an even, compact layer, especially at the corners. Arrange the cooked chicken and onion juices over the rice, leaving a 2 cm (3/4 in) border so the filling does not break through the crust. Cover with the remaining rice, level the surface, and press firmly but gently. Drizzle half of the reserved melted butter over the top.

  8. Steam the tahchin in the oven

    Cover the baking dish tightly with foil, crimping the edges so steam cannot escape. Bake on the lower-middle rack for 45 minutes. The rice should feel set when the dish is nudged, but the crust will still need time to deepen in color.

    Remove the foil and continue baking for 20 to 30 minutes. Begin checking at 20 minutes. The edges visible through the dish should be deep golden, the top should look dry and set, and the center should reach at least 71°C/160°F on a food thermometer with no wet egg mixture remaining. If the center is set before the crust is richly colored, move the dish to a lower rack for the final few minutes.

  10. Warm the barberries

    Rinse 60 g of dried barberries briefly under cool water and pat them completely dry. Warm the remaining melted butter in a small skillet over low heat.   11. Rest, invert, and serve

    Let the tahchin stand undisturbed for 15 minutes so the crust firms enough to release cleanly. Run a thin knife around the edges. Place a large serving platter upside down over the baking dish, hold both securely, and invert in one confident motion. Lift off the dish, spoon the warm barberries over the crust, scatter with pistachios, and cut into squares for immediate serving.
